This recipe received two thumbs up from the taste testers here at Now That’s Vegan! It’s a refreshing green juice that’s — believe it or not — tart and sweet. If you can’t imagine what that’s like, try it and see!
Ingredients:
1 cup baby kale leaves
2 celery stalks, chopped
1 small zucchini, chopped
1/2-inch piece ginger root, peeled
1 cup cold filtered water
1/4 cup fresh lemon juice
3 tablespoons 100% pure maple syrup
2 cups ice cubes (approximately 12 ice cubes)
Directions:
- Place the baby kale, zucchini, ginger, and water into a high powered blender container. Blend on low speed then high for 1 minute or until fully blended. Strain through a fine mesh strainer into a large pitcher. Discard the pulp and set the juice aside.
- Pour the lemon juice into a small bowl, then stir in the maple syrup. Add the mixture to the pitcher of juice and stir until well combined.
- Equally divide the ice between two tall glasses. Pour the juice over the ice, and serve! Best when served right away, but stores refrigerated in a covered container for 1 day, which means you can make it in morning to have later that same day. If you plan to have the juice later in the day, be sure to stir or shake with a tight fitting lid before serving.
Yield: Makes 2 (16oz) glasses
