
Soft vegan and gluten-free dinosaur fossil cookies. They’re sweetened with maple syrup and spiced with cinnamon and nutmeg. You’ll also want to make our recipe for White Vegan Frosting to decorate them. And at Christmas time, try the provided variation for gingerbread men cookies.
White Frosting:
- 1 recipe White Vegan Frosting, to decorate
Wet Ingredients:
- 1 tablespoon ground flax seeds
- 3 tablespoons warm filtered water
- 1/2 cup apple sauce, unsweetened
- 1/2 cup pure maple syrup
- 2 teaspoons apple cider vinegar
- 2 teaspoons pure vanilla extract
Dry Ingredients:
- 2 cups gluten-free almond flour
- 1 cup gluten-free sorghum flour
- 1/2 cup gluten-free brown rice flour
- 1/2 cup gluten-free coconut flour
- 1 tablespoons cacao powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon Himalayan salt
Directions:
- Make our recipe for White Vegan Frosting. Refrigerate until ready for use.
- In a medium size bowl, mix together the ground flax seeds and warm filtered water. Let sit for 3 minutes or until goopy.
- Mix in the remaining wet ingredients. Set aside.
- In a large bowl, whisk together the dry ingredients to combine and aerate.
- Pour the wet ingredients into the dry. Using a large wooden spoon, mix until well combined. Use clean hands to form the soft dough into a ball. Roll between two pieces of plastic wrap, for a 1/4-inch high thickness. Cut out the cookies with a dinosaur shape cookie cutter.
- Place cookies on a baking sheet lined with parchment paper and bake in a preheated 350º F oven for 25 minutes or until edges are brown. Remove from oven and let cool.
- Fill a piping bag with the frosting and use a small round piping tip to decorate. Stores refrigerated for 3 to 5 days.
Variations:
- For chocolate cookies, omit the ground nutmeg and add 2 additional tablespoons of cacao powder.
- For gingerbread men cookies, omit the cacao powder, add 1 teaspoon of ground ginger, and cut the flattened dough with a gingerbread man cookie cutter. After the cookies bake and cool, use the Vegan White Frosting to decorate each with dots and lines to indicate facial features and clothing.
Yield: Makes approximately 18 cookies, 3-inch x 4-inch in size.
