This is a quick and easy recipe for a tomato and avocado salad that’s both delicious and satisfying. Serve it before or with dinner, or serve it with Socca and you’ve got a light lunch!
Ingredients:
- 16 to 20 cherry tomatoes, halved
- 1 large avocado, thinly sliced
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon red onion, finely chopped
- 1/4 cup fresh lime juice
- 3 teaspoons Brag Apple Cider Vinegar or other brand
- 3 teaspoons grape seed oil
- 1/4 teaspoon onion powder
- 1/4 teaspoon finely ground Himalayan salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
Directions:
- Place the tomatoes and avocado on a serving platter and sprinkle with the chopped red onion and cilantro.
- In a small bowl, whisk together the lime juice, vinegar, grape seed oil, onion powder, salt, and pepper. Drizzle the lime mixture over the tomatoes and avocado and serve!
