Tahini is often used as a sauce or condiment in Middle Eastern and Mediterranean cuisine. It’s made with sesame seeds. This recipe calls for lightly toasted sesame seeds, which makes it extra tasty. Most hummus recipes call for tahini, as does our Homemade Hummus recipe. And it makes a great dressing for Kale and Carrot Salad.
Ingredients:
- 2 cups hulled* sesame seeds
- 3 tablespoons extra virgin olive oil**
- 1/4 teaspoons finely ground Himalayan salt
Directions:
- Lightly toast the sesame seeds in a dry skillet, in small batches. Stir freequently while toasting, and keep an eye on them so they don’t burn. As soon as the seeds become a light golden color, transfer them to a food processor bowl.
- Add the olive oil and salt and process for 4 minutes or until smooth and creamy, stopping to scrape the sides as needed. Processing will warm the mixture, so let it cool before transferring it to a Jar. Stores refrigerated in a jar with an airtight lid for up to 5 days. Use in any recipe that calls for tahini.

Makes about 1 1/2 cups
* Know that when shopping for sesame seeds, the ones that are hulled are lighter in color. Hulled sesame seeds are less bitter and make a creamier spread.
** For a more flavorful tahini, choose a flavorful olive oil. You might try California Olive Ranch, or Brightland Extra Virgin Olive Oil.
