This tomato soup is simple to make and tasty. Add a vegan grated ‘cheese’ garnish to make it even better. Serve it for lunch, or whenever your in the mood for soup.
Ingredients:
- 6 medium tomatoes, cut into chunks
- 1 (6oz) can tomato paste
- 1 vidalia onion, cut into chunks
- 2 cloves garlic
- 1 tablespoon fresh chopped thyme
- 1 cup water or gluten-free vegetable broth
- 1 tablespoon olive oil
- 1 tablespoon vegan grated ‘cheese’ (optional)
Directions:
- Blend all ingredients in a high-powered blender on high-speed for 1 minute or until creamy smooth.
- Transfer mixture to a pot and bring to a boil. Reduce heat to medium low and simmer for 10 minutes. Serve hot, with or without a garnish of vegan grated ‘cheese.’
Variations:
- Instead of cooking the soup, blend 5 minutes or until very warm, since blending longer in a high powered blender can actually heat the soup without having to cook it.
- For added flavor, add to the blend 1/2 cup chopped celery, and 1 tablespoon fresh chopped basil.
- Replace the vegan grated ‘cheese’ garnish with flax seed crackers, broken into small pieces.
