Instead of scrambled eggs, why not try scrambled tofu?
Ingredients:
- 1 green bell pepper, diced
- 1 tablespoon coconut oil
- 2 cloves garlic, minced
- 1 (14 oz) tray super firm organic tofu, broken into large pieces
- 2 tablespoons nutritional yeast
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon sesame seed oil
- 1/2 teaspoon Himalayan salt, or to taste
- 1/2 teaspoon ground black pepper, or to taste
- dash of cayenne
- 1 tablespoon fresh chives, minced
Directions:
- In a large skillet, over medium heat, sauté the bell pepper in coconut oil for 3 minutes or until just tender.
- Add the garlic and sauté 1 minute, then add the tofu, nutritional yeast, and turmeric powder. Cook 5 minutes or until heated and well combined, stirring gently and occasionally with a large wooden spoon. Also use the spoon to break the tofu into smaller, bite-size pieces.
- Remove from heat. Drizzle with sesame seed oil, add the salt, pepper, and cayenne pepper. Transfer to serving plates, sprinkle with the minced chives, and serve.
Variations:
- If you like tomatoes, top with Homemade Ketchup.
- To make it spicy hot, replace the bell pepper with 1 red chili or jalapeño pepper, minced, or top with a desired amount of Hot Salsa.
- If you like onion, replace the bell pepper with a small yellow onion, diced, or replace the chives with 1/4 small red onion, minced.
- For a lighter flavor, replace the sesame seed oil with extra virgin olive oil.
