If you like pumpkin pie, you’ll like this smoothie. It’s made with pumpkin puree and a variety of rich spices, such as cinnamon, ginger, nutmeg, and more. Makes two tall glasses for you and a family member or friend to drink in the autumn months, or any time of the year!
Ingredients:
- 1 (150z) Farmers Market Organic Pumpkin Puréea or other brand
- 3 medium size carrots, chopped
- 1 frozen organic banana, chopped
- 1 (13.6oz) can Thai Kitchen Organic Coconut Milk or other brand
- 1/4 cup 100% pure Coomb’s Organic Maple Syrup or other brand
- 2 teaspoons Navitas Naturals Organic Lucuma Powder (optional)
- 1 teaspoon ground cinnamon*
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1/4 teaspoon Simply Organic Pure Vanilla Extract or other brand
- 6 ice cubes (about 1 cup)
Directions:
- Blend all the ingredients, except ice cubes, in a high powered blender on low speed then high for 1 minute or until creamy smooth.
- Add the ice and blend 30 seconds more, or until the ice dissolves. Immediately pour into 2 tall glasses or 4 small, add a straws, and serve.
Yield:
Makes 2 (16oz ) servings.
*For ease, the Cinnamon combined with the other spices found in this recipe can be replaced with 1 tablespoon of pumpkin pie spice.
