A simple recipe for pickled onions with very few ingredients. And, it doesn’t require cooking. Plan ahead, however, because it takes 1 or 2 days for the vinegar to absorb into the onion. Use to add a tangy zing to meals. Goes great in salads, tacos, veggie burgers, and more!
Ingredients:
- 1 large red onion
- 1 cup apple cinder vinegar or white vinegar
- 1/4 cup filtered water, adjusted
- 2 teaspoons 100% pure maple syrup
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper corns (optional)
Directions:
- Sterilize* an 8 oz mason jar that you’ll be using, as well as any equipment and utensils that will come in contact with the ingredients.
- Wash your hands well, and also the onion, then remove the onion’s outer layer. Use a chef’s knife to thinly slice the onion. Place the slices in the sterilized mason jar and refrigerate.
- In a small pot, bring the remaining ingredients to a boil. Reduce heat to low and mix for 1 minute or until the syrup is dissolved. Remove from heat and set aside for 20 minutes or until cooled to room temperature.
- Remove the jar of sliced onion from the refrigerator. Add the cooled liquid mixture. If necessary, add additional filtered water to cover the onion. Cover the jar with a tight fitting lid and refrigerate overnight. This will enhance the flavor. Goes great with our recipes for Gardan Salad, Vegan taco Fixins, and Black Bean Burger Patties.

* There are many ways to sterilize jars and kitchen tools. The Bottle Store has an article that shares How to Sterilize Glass Bottles and Jars at Home. You can also use stainless steel tools that are first boiled for 10 minutes then placed on a clean dish cloth to air-dry. Also, ask the manufacturer to recommend the best way to sterilize other items and equipment, if using, such as your cutting board, blender container, or food processor bowl.
