A good time to have a cool peach flavored drink is when everything is peachy! Another time would be when you could use some cheering up, or simply when needing to quench your thirst. This peach lemonade is just as refreshing as regular lemonade, but not as ordinary.
Ingredients:
- 6 peaches plus an extra to garnish, pits removed and quartered
- 1/2 cup fresh lemon juice
- 1 tablespoon agave nectar
- 4 1/4 cups cold water or 1 liter club soda
- 1 cup ice
Directions:
- Place the peaches in a large saucepan and cook over medium heat for 5 minutes or until soft, stirring constantly with a wooden spoon and using the back of the spoon to break up the fruit. Remove from heat and allow to cool for 10 minutes. Discard any loose peach skins or remove them entirely if you wish.
- Transfer the peaches along with its syrup to a high powered blender, then add the lemon juice and agave. Blend on a low speed then high for 30 seconds or until well combined. Pour the mixture into a pitcher, then add the cold water or club soda and ice. Stir to combine. Pour into 8oz glasses, add a peach wedge garnish to each, and serve.
Variations:
- For a peachy citrus flavor add to the blend 1 small orange, peeled and seeds removed.
- For a sweetener alternative, use stevia in place of agave, or combine the two, to taste.
