This creamy nondairy butter* tastes great! Slice it to create pats of butter that you can use to top steamed vegetables, gluten-free rice noodles, brown rice, or baked potato. For an extra special treat, place a pat on a slice of warm (fresh out of the oven) gluten-free Irish Soda Bread!
Ingredients:
- 1/4 cup Thai Kitchen Organic Coconut Milk** or other brand
- 1/4 cup Organic Traditions Unrefinded Coconut Oil or other brand
- 1 tablespoon Brag Nutritional Yeast Seasoning*** or other brand
- 1/4 teaspoon Spice Lab Himalayan Salt or other brand
Directions:
- Process all the ingredients in a food processor for 1 minute or until creamy smooth.
- Transfer to three units of a flexible ice cube tray, or a small container if making a tub of butter. Cover with plastic wrap and place in freezer for 1 hour or until fully hardened. If the ingredients have separated, which sometimes happens, you may need to process again, and again freeze.
- Remove from freezer and let sit 2 minutes to slightly soften. If using a container, serve as is. If using an ice cube tray, remove butter from tray, place on a butter tray, slice with a butter knife to create pats of butter, and serve with cooked or baked foods. Stores refrigerated in a covered container for up to two weeks.

Makes 3 cubes (about 1/2 cup)
*This nondairy butter is best used at the table on cooked or heated foods; it is not meant for use in cooking or baking because it acts differently than dairy butter in some recipes. For stovetop cooking you can use coconut oil, or maybe try Earth Balance Vegan Spread which has a buttery flavor. For baking there’s Spectrum Organic Vegetable Shortening.
**Be sure to choose unsweetened coconut milk, and don’t use light coconut milk, which is simply coconut milk with lots of water added to it. And because coconut milk naturally hardens and separates, be sure to shake the can well before opening and stir before using.
***Nutritional Yeast is deactivated yeast that is often used in vegan cooking to add flavor and nutrients. Many brands are fortified with vitamin B-12, but check the label to be certain.
