A delicious and refreshing punch made with a juice extractor. Juicing* presses or shreds vegetables and fruits and remove all the pulp, which is ideal for juice cleansing**.
Ingredients:
- 4 carrots (2 cups chopped)
- 2 celery stalks (2/3 cup chopped)
- 1/4 medium beet (1/2 cup)
- 1/4 pineapple, rind*** removed (1 1/2 cups chopped)
- 1 tablespoon fresh lemon juice
- 6 ice cubes (1 cup), optional
Directions:
- Wash vegetables and fruits thoroughly and chop to prepare for juicing.
- Pass each ingredient through an Omega VSJ843QS Low Speed Juicer or other brand, except for the lemon juice and ice, until you have a full 8oz glass.
- Mix in the lemon juice, strain through a strainer, and serve at room temperature, or transfer to a large 16oz glass and shake with ice. Best when served immediately, though stores refrigerated for up to two days.
Variations:
- For added zing, include 1/2-inch piece peeled ginger, when passing ingredients through the juicer.
- For added sweetness, mix into the juice stevia, to taste.
