A tasty green pudding! Perfect after reading to your children Bartholomew and the Oobleck by Dr. Seuss. Made with healthy green vegetables and a little fruit. Serve it to adults as well, perhaps on St. Patrick’s Day!
Ingredients:
- 2 ripe avocados
- 1 large kale leaf (green curly variety), stem removed
- 1/4 cup Italian parsley
- 1 rib celery
- 1/2 pineapple, rind and core removed, chopped (about 1 cup)
- 1 tablespoon fresh lemon juice
- 1 teaspoon pure vanilla extract, alcohol free for better flavor
- 1/8 teaspoon sea salt (0ptional)
Directions:
- Place all ingredients in a high powered blender and blend first on low speed then high until creamy Stop to scrape the sides as needed.
- Serve immediately in 2 or 4 small serving bowls or fluted dessert glasses.
Variations:
- Make it minty! Add 12 or more fresh mint leaves or 1/4 teaspoon mint extract, and garnish with a sprig of mint.
- Add 3/4 banana to the blend for an extra creamy texture and added flavor, and slice the remaining banana to garnish.
