This is a super delicious fruit dessert with apple, pear, and banana, wrapped in a Fruity Roll-Up and resting in a vanilla cream with a garnish of chocolate sauce. It’s one of our favorite desserts here at Now That’s Vegan!
Ingredients:
- 1 recipe Fruity Roll-Ups (prepared a day in advance)
- 1 recipe Vanilla Cream
- 1 recipe Chocolate Sauce
- 2 tablespoons freshly squeezed lemon juice
- 1 apple, peeled, cored, and sliced into 1/4-inch wide and 2 or 3-inch long pieces
- 1 pear, peeled, cored, and sliced into 1/4-inch wide and 2 or 3-inch long pieces
- 1 banana, cut in half crosswise, then each half cut in fourths lengthwise
- 1/4 teaspoon ground cardamom or cinnamon
Directions:
- A day in advance, dehydrate applesauce according to our Fruity Roll-Ups recipe. Cut the whole in half, and cut each half in half, for four pieces equal in size. Store refrigerated, in an airtight container with wax paper placed between each piece.
- Make the recipes for Vanilla Cream and Chocolate Sauce.
- In a large bowl, mix together the lemon juice and ground cardamom. Add the fruit and gently toss to coat.
- Retrieve the previously made Fruity Roll-Ups from the refrigerator. Place on each 5 or 6 pieces of the sliced fruit and roll it up.
- Scoop a desired amount of Vanilla Cream on a serving plate, place on this the fruit-filled Roll-up, garnish with Chocolate Sauce, and serve!
