A gelatin-like dessert that doesn’t use gelatin, since gelatin is made from animal bones, cartilage, and skin. What this recipe uses instead is a gelatinous substance derived from red algae called agar, also known as agar-agar. Cranberry juice gives this dessert its flavor and color, and it’s naturally sweetened. Why not give it a try?!
Ingredients:
- 1 teaspoon agar powder
- 1 1/4 cup 100% pure cranberry juice
- 3/4 cups filtered water
- 2 tablespoons light agave nectar
Directions:
- In a medium size pot, use a long wooden spoon to mix together all the ingredients.
- Bring to a boil and stir continually for 2 minutes.
- Remove from heat and let sit 5 minutes or until slightly cool.
- Pour into 4 small bowls, divided equally. Refrigerate for 20 minutes or until firm, then serve and enjoy! Stores refrigerated for up to 5 days.
Variations:
- Add an additional 2 tablespoons of light agave nectar if you prefer a sweeter dessert.
- For a grape or apple flavor, replace the cranberry juice with 100% pure grape juice or 100% pure apple juice.
- For a dessert with a maple flavor, replace the cranberry juice and agave nectar with 100% pure apple juice and 100% pure maple syrup.

Makes 4 (1/2 cup) servings
