Looking for a grain-free recipe? How about finely chopped cauliflower? It resembles white rice. And to make it even better, this recipe adds chopped vegetables, olives, Himalayan salt, and ground black pepper.
Ingredients:
- 1 head cauliflower, roughly chopped
- 8 green onions, white and light green parts only, thinly sliced
- 2 celery stalks, thinly sliced
- 1 medium zucchini, chopped
- 1 medium yellow squash, chopped
- 1 medium carrot, grated
- 2 tablespoons Kalamata olives, pitted and sliced
- 3 tablespoons parsley, chopped
- 2 tablespoons fresh lemon juice
- 1 teaspoon Himalayan salt
- 1/2 teaspoon ground black pepper, or to taste
Directions:
- Place 1/4 of the cauliflower pieces into a food processor bowl, or the amount you feel that your food processor can handle, and pulse until finely chopped. Transfer to a large bowl. Repeat with the remaining cauliflower.
- Mix in the remaining ingredients, and serve!
Variations:
- For added flavor, mix in 1/4 cup of your favorite herb, finely chopped. You might try oregano, basil, thyme, or dill.
- For added zing, add 1/2 thinly sliced jalapeño pepper or to taste.
- Add cooked chickpeas or lentils and you’ve got a light lunch!
