A simple recipe that adds a flavorful topping to legumes, plant-based burgers, or toasted gluten-free bread.
Ingredients:
- 2 large yellow or white onions, thinly sliced.
- 1/2 cup filtered water, adjusted
- 1/2 teaspoon coconut oil
Directions:
- Add the onions to a large skillet. Sauté on high heat. Add drops of the remaining filtered water whenever the onions start to stick. Continue to sauté for 8 minutes or until soft and translucent. If there’s remaining water, allow it to evaporate.
- Add the oil and toss to coat. Lower heat to medium and sauté for an additional 5 minutes or until golden-brown. Don’t over cook. Transfer immediately to a serving bowl to have with legumes, plant-based burgers such as red rice burgers, or toasted gluten-free bread. Yield: Makes 2 to 4 servings.
