If you like banana and papaya you’ll like this easy-to-make pudding. It’s texture is similar to applesauce, but it’s creamy enough to call it pudding. If you’ve never had papaya, it’s a large tropical fruit that is semisweet with a flavor like no other fruit. Just be sure to use a ripe papaya. You’ll know it’s ripe when it feels soft and its skin has turned from green to an amber-orange or yellow (depending on the type of papaya).
Ingredients:
- 1 large ripe papaya, refrigerated to cool
- 2 ripe bananas
- 2 to 4 dates*, soaked in filtered or distilled water for 4 hours then drained.
Directions:
- Cut the papaya in half the long way. Remove and discard seeds. Scoop out flesh and place it in a high powered blender.
- Add remaining ingredients and blend on a low speed then high for 1 minute or until creamy smooth. Don’t overblend. Pour into dessert bowls and serve.
