A thick fruit and berry smoothie bowl, packed with nutrients. Make it your next snack or dessert.
Ingredients:
- 1 cup gluten-free rolled oats
- 2/3 cup raw walnuts*, chopped
- 1/2 cup coconut flakes, unsweetened
- 2 cups frozen blue berries
- 1 cup frozen açai berries**
- 1 cup raw cashews*, soaked 2 hours, drained
- 1/2 cup soy milk
- 2 tablespoons 100% pure maple syrup
- 1 ripe banana, sliced
- 1 cup strawberries, sliced
Directions:
- Place the oats, walnuts, and cashews onto large bowl. Use a large spoon to mix well. Transfer to a parchment paper lined baking pan, in one layer. Bake in a preheated 350ºF oven for 12 minutes. Use a spatula to flip and bake an additional 8 minutes, or until lightly toasted. Remove from heat and let cool.
- Place the blue berries, açai berries, cashews, and soy milk into a high-powered blender container. Blend on low speed then high, using a tamper or stopping to scrape the sides as needed, for 2 minutes or until creamy smooth. Divide equally between 2 serving bowls.
- Top with a desired amount of the toasted oat mixture*** and the sliced banana and strawberries. Serve immediately.
Variations:
- Replace the walnuts with pecans.
- Replace the soy milk with almond milk or other plant-based milk.
- Replace the bananas and strawberries with fresh chopped cantaloup and blue berries.

* Be sure to choose raw unsalted nuts. And since non-organic nuts are often processed using artificial chemicals, look for ones that are certified organic. You can find raw organic nuts at nuts.com, as well as raw organic seeds and organic dried fruits.
**Açai berries are small, dark purple berries that grow on the acai palm tree. They grow in parts of Central and South America. You can find them in the freezer section in some supermarkets or health food stores. Look for bite-sized pieces, made from a puree. You might try Pitaya Foods brand.
