This roasted cauliflower uses spices that add loads of flavor. Makes a great side dish. Not to mention, it’s easy to make. And once it’s made, simply slice and serve.
Ingredients:
- 1 head cauliflower
- 1 cup filtered water, adjusted
- 2 large cloves garlic, grated
- 2 tablespoons lime juice
- 1 tablespoon pure maple syrup
- 1 tablespoon olive oil
- 1 tablespoon liquid aminos
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 2 teaspoons paprika powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon Himalayan salt
Directions:
- Place the cauliflower in a large pot with filtered water and cover. Steam the cauliflower until it is just tender, about 10 minutes. Stick with a fork to check for doneness. If necessary add additional water and steam some more.
- Transfer to a cast iron pan lined with parchment paper. Set aside.
- In a small bowl, mix the remaining ingredients. Use a basting brush to cover the cauliflower with the mixture.
- Place in a preheated 450ºF oven and bake for 18 minutes or until crispy on the outside. Use an oven mitt to transfer to a silicone trivet. Slice and serve, with or without lemon or lime wedges. Also goes great with hummus.
